Ingredients

  • 1 lb Skirt Steak

  • 1 tbsp Big Poppa’s Cash Cow Seasoning

  • 1 tbsp Big Poppa’s Jallelujah Lime Seasoning

  • ½ cup Chopped Cilantro

  • 1 cup Pico de Gallo

  • 1 cup Salsa

  • 1 large bag Tortilla/Nacho Chips

  • 1 cup Pre-cooked Pinto Beans

  • 2 cups Shredded Cheese

  • 1 cup Hatch Chili Queso

  • 1/2 cup Pickled Hatch Chilis

  • 2 Avocados (for guacamole)

  • 1/2 cup Cotija Cheese

  • 1/2 cup Mexican Crema

Directions

  1. Preheat your drum smoker and raise the basket to grilling mode.

  2. Season the skirt steak with Big Poppa’s Cash Cow and Jallelujah Lime Seasonings. Grill until seared and caramelized, then remove and let rest.

  3. Chop the grilled steak into bite-sized pieces.
