Yes. Before your first cook, coat the inside of the drum with a light layer of cooking oil and run the smoker at 300–350°F for 2–3 hours. This helps protect the metal, builds a natural cooking surface, and prepares your smoker for years of use.
Allow all ashes to cool completely before removing them. Empty the ash catcher after each cook and wipe away any remaining debris. Keeping the ash catcher clean promotes proper airflow and helps extend the life of your smoker.
Yes. Depending on the size of the meat you're cooking, you can use both the hanging rack and cooking grate together. Just make sure there's enough clearance so the hanging meat doesn't touch the grate or restrict airflow during the cook.
