Ingredients

  • 2 lb ground beef

  • 1 ½ chopped onions

  • 1 chopped red bell pepper

  • 1 chopped jalapeño

  • 2 cans Italian chopped tomatoes

  • 1 can chipotle in adobo

  • 1 tsp achiote (diluted in water)

  • 1 tbsp chili powder

  • 1 tbsp paprika

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 1 tbsp cumin

  • 8 small cloves minced garlic

  • ½ tbsp Big Poppa’s Little Louie’s Seasoning

  • ½ tbsp Big Poppa’s Cash Cow Seasoning

  • ½ tbsp Big Poppa’s Jallelujah Jalapeño Seasoning

  • 1 cup milk

Directions

  1. Preheat and oil a skillet over medium heat.

  2. Sauté the onions, red bell pepper, and jalapeño until they become translucent.

  3. Add chili powder, paprika, garlic powder, onion powder, and cumin, stirring to coat the veggies.

  4. Mix in the diluted achiote, chipotle, and fresh garlic.

  5. Season with Big Poppa’s Little Louie’s, Cash Cow, and Jallelujah Jalapeño Seasonings.

  6. Add the ground beef, breaking it apart and mixing thoroughly with the spices. Cook for 5–10 minutes.

  7. Pour in 1 ½ cans of chopped tomatoes and 1 cup of milk, stirring to combine.

  8. Bring to a boil, then reduce heat to low and let simmer for 2 hours, stirring occasionally.

  9. Skim off excess fat, adjust seasoning if needed, and serve hot.

  10. Garnish with shredded cheese and a drizzle of Mexican crema for a perfect finishing touch.
