Ingredients

  • Raw Biscuits of choice (Big Poppa like Trader Joes Biscuits)
  • Ground sausage (Big Poppa used Jimmy Deans)
  • Big Poppa’s Little Louies Seasoning
  • Big Poppa’s Jallelujah Seasoning
  • Big Poppa’s Cash Cow Seasoning
  • Eggs
  • Flour
  • Butter
  • Red Taco Sauce
  • Mexican crema
  • Pepper Colby jack cheese
  • Cheddar cheese

Directions

  1. Preheat your grill/oven to 350 degrees

  2. Let’s start by making our Gravy n’ Sausage. Take your ground sausage and brown it up on your skillet over medium heat
  3. Once browned/caramelized add in 1/3 cup of flour and stir
  4. Season with some of Big Poppa’s Cash Cow and Big Poppa’s Little Louies Seasoning
  5. Add 3 cups of milk and stir until gravy thickens
  6. Now that your gravy is done, spray your cast iron with some cooking oil
  7. Slice raw biscuits into halves (like burger buns) and start by adding a layer of biscuits in the cast iron skillet
  8. Whisk 6-8 eggs in a bowl and add in a splash of red taco sauce, about 1/3 cup of Mexican cream, season with Big Poppa’s Jallelujah jalapeño and whisk again.
  9. Pour 3/4 of the eggs over the layer of biscuits and place the cast iron skillet in your preheated grill/oven for about 15 min
  10. Take out skillet from grill/oven and add a layer of cheese, the remaining eggs, gravy n’ sausage, and finish by topping off with a layer of biscuits
  11. Put back in grill/oven for another 30-40 minutes or until internal temp is 200 and biscuits are nice and golden brown
  12. Let cool down, serve, and enjoy!
