Ingredients

  • 2 lbs Ground Beef

  • 2 Taco Seasoning Packets

  • 1 can Rotel Diced Tomatoes & Green Chiles

  • 1 Sweet Onion, thinly sliced

  • Jalapeños, thinly sliced

  • Cheese (your choice)

  • Slider Buns

  • Tomatoes, sliced

  • Lettuce, shredded

  • Taco Sauce

  • Mayonnaise

  • Big Poppa’s Jallelujah Jalapeño Seasoning

Directions

  1. Preheat the Grill/Smoker: Set your grill or smoker to 400°F.

  2. Prepare the Taco Sauce: In a blender, combine 2/3 cup of water, 2 packets of taco seasoning, and a portion of the Rotel Diced Tomatoes & Green Chiles (drain some juice). Blend until smooth.

  3. Mix the Beef: In a large bowl, fold the blended taco sauce into the ground beef until evenly distributed.

  4. Prepare the Sheet Pan: Spray a sheet pan with oil. Layer the bottom with thinly sliced sweet onion and jalapeños.

  5. Cook the Beef: Press the seasoned ground beef flat over the onion and jalapeños. Place the sheet pan on the grill or smoker and cook for about 20 minutes over indirect heat.

  6. Add Cheese: Sprinkle your choice of cheese over the meat in the last few minutes of cooking to allow it to melt.

  7. Make the Burger Aioli: In a small bowl, combine mayonnaise, taco sauce, and Big Poppa’s Jallelujah Jalapeño Seasoning. Mix well.

  8. Assemble the Sliders:
    - Lay the bottom slider buns on a separate sheet pan.
    - Spread a layer of the aioli over the buns.
    - Add a bed of shredded lettuce.
    - Cut the cooked beef patty into portions and place on the lettuce.
    - Add sliced tomatoes.
    - Spread aioli on the top buns and place them on the sliders.

  9. Serve: Arrange the sliders on a platter and serve hot. Enjoy the explosion of flavors with every bite!
