Juicy seasoned chicken, melted jack cheese, and a fresh avocado-pineapple-jalapeño salsa come together in this bold and satisfying Chicken Ciabatta Sandwich. Perfectly griddled and stacked on toasted ciabatta, this sandwich is the real deal.
Ingredients
1 ciabatta loaf
2 skinless chicken breasts
4 slices jack cheese
1 tsp Big Poppa’s Jallelujah Lime Seasoning
1 tsp Big Poppa’s Little Louie’s Seasoning
2 jalapeños, diced (remove seeds and veins for less heat)
1 lime, juiced
¼ cup cilantro, chopped
1 red onion, chopped
½ cup pineapple, diced
1 avocado, chopped
1 tbsp mayo
4 lettuce leaves
1 tbsp ghee or oil
Directions
Make the Salsa:
Chop the red onion, jalapeños, pineapple, and cilantro. Add everything to a bowl and squeeze in fresh lime juice. Sprinkle with Big Poppa’s Jallelujah Lime Seasoning and mix. Fold in the chopped avocado and set aside.
Prep the Chicken:
Place the chicken breasts in a ziplock bag and pound them thin for even cooking. Season generously with Big Poppa’s Little Louie’s Seasoning.
