This Brisket Cheesesteak Sandwich is a game-changer, combining tender, smoky brisket with caramelized onions, gooey cheese, and a toasted hoagie roll. Perfect for using up leftover brisket, this griddle-cooked masterpiece is loaded with flavor and easy to make in just minutes!

Ingredients

  • 2 cups leftover brisket, chopped

  • 1 large onion, sliced

  • 1 tablespoon Big Poppa’s Cash Cow Seasoning

  • 4 hoagie rolls

  • 4 slices American cheese

  • ½ cup shredded cheese (cheddar or provolone)

  • 2 tablespoons mayonnaise

  • Cooking oil

  • Water (for spritzing)

Directions

  1. Preheat the griddle to medium heat.

  2. Drizzle a little oil on the griddle and spread it evenly.

  3. Add sliced onions to the griddle and season with half of Big Poppa’s Cash Cow Seasoning.

  4. Spritz onions with water and cover with a dome to steam and soften.

  5. On the other side of the griddle, warm up the leftover brisket.

  6. Season the brisket with the remaining Big Poppa’s Cash Cow Seasoning and spritz with water to keep it moist. Cover and let it heat through.

  7. Stir the onions occasionally to prevent burning.
