Chicken Cordon Bleu, but make it crispy. This griddle-style version of the classic, cheesy, ham-stuffed favorite is easy to make and packed with bold flavors. Instead of rolling and stuffing the chicken, we’re keeping it simple—crispy, golden-breaded chicken, stacked with Swiss cheese, crispy bacon, and smoky ham, all cooked on the griddle for maximum flavor.

The real MVP? A double-dipped Panko-Parmesan crust, seasoned with Big Poppa’s Desert Gold & Little Louie’s Seasoning for the perfect balance of garlic, herbs, and citrus. Served over buttery mashed potatoes with rich gravy, this dish is an absolute knockout.

This crispy Chicken Cordon Bleu is a griddle-friendly twist on the classic. Golden-breaded chicken, melty Swiss cheese, smoky ham, and crispy bacon come together for a flavor-packed bite—all served over mashed potatoes with gravy.

Ingredients

  • 4 chicken breast cutlets

  • 2 eggs (beaten, for egg wash)

  • 1 tsp Big Poppa’s Little Louie’s Seasoning

  • ½ cup Panko breadcrumbs

  • ½ cup grated Parmesan

  • 1 tsp Big Poppa’s Desert Gold Seasoning

  • 4 slices Swiss cheese

  • 4 slices ham

  • 4 slices bacon

  • 2 cups mashed potatoes

  • 1 cup gravy

  • 1 tbsp fresh parsley, chopped (for garnish)

  • Oil (for cooking)

Directions

  1. Prep your mashed potatoes and gravy ahead of time and keep warm.

  2. In a bowl, beat the eggs and season with Big Poppa’s Little Louie’s Seasoning.

  3. In another bowl, mix Panko breadcrumbs, Parmesan, and Big Poppa’s Desert Gold Seasoning.

  4. Dip each chicken breast cutlet into the egg wash, then coat in the Panko-Parmesan mix.

  5. Double dip by repeating the process for an extra crispy crust.

  6. Preheat to medium-high heat and generously add oil.

  7. Place the breaded chicken on the griddle and let cook until golden brown on one side (about 4 minutes).

  8. Flip and cook the other side until the chicken is fully cooked.

  9. While the chicken is cooking, griddle the bacon until crispy.

  10. Heat up the ham slices for a few seconds on each side.

  11. Stack the ham and crispy bacon over each chicken cutlet.

  12. Place a Swiss cheese slice on top, cover with a griddle dome, and let it melt.

  13. On a plate, spread a bed of mashed potatoes and drizzle with gravy.

  14. Place the crispy chicken cutlet on top.

  15. Drizzle with more gravy and sprinkle with fresh parsley.

  16. Dig in while it’s hot! This crispy, cheesy, and buttery dish is a next-level comfort food win.
