Ingredients

  • Cod fish (4 fillets)

  • Burger buns (4 buns)

  • Flour (1 cup)

  • Big Poppa’s Desert Gold Seasoning (1 1/2 tablespoons)

  • Big Poppa’s Jallelujah Lime Seasoning (1/2 tablespoon)

  • Corn starch (1/4 cup)

  • Baking powder (1 teaspoon)

  • Potato starch (1/4 cup)

  • Colby Jack cheese (4 slices)

  • Mayo (for spreading)

  • Butter (for toasting buns)

  • Shredded lettuce (as needed)

  • Tartar Sauce (for spreading)

  • Tomatoes (sliced, as needed)

  • Cold beer (1 can)

  • Oil (for frying)

Directions

  1. Prepare the Batter: In a bowl, combine 1 cup of flour, 1/4 cup of corn starch, 1 teaspoon of baking powder, 1/4 cup of potato starch, 1/2 tablespoon of Big Poppa’s Jallelujah Lime Seasoning, and 1 1/2 tablespoons of Big Poppa’s Desert Gold Seasoning. Mix thoroughly with a fork.

  2. Prep the Fish: Lightly coat the cod fillets in plain potato starch, ensuring an even coating.

  3. Heat the Oil: Preheat your oil to 375°F (190°C) in a deep fryer or large pot.

  4. Make the Batter: Add 1 can of cold beer to the dry mixture and stir with a fork until the batter is smooth and free of clumps.

  5. Fry the Fish: Dip the potato-starch-coated cod fillets into the beer batter, allowing excess batter to drip off. Gently place the fillets into the hot oil. Fry for approximately 3 minutes on each side, or until the fillets are crispy and golden brown.

  6. Add the Cheese: Remove the fish from the oil and place them on a wire rack to drain excess oil. While still hot, immediately place a slice of Colby Jack cheese on each fillet to melt.

  7. Toast the Buns: Butter your burger buns and toast them until golden brown.

  8. Assemble the Sandwich: Spread mayo on the bottom bun. Add sliced tomatoes, followed by shredded lettuce. Place the crispy, cheese-topped fish fillet on top. Spread tartar sauce on the top bun, and close the sandwich.
