Please note: The standard firebox included with this smoker will eventually need a paint touch up, especially if used at high temperatures. We recommend upgrading to an insulated fire box to avoid having to touch up paint.

For smoking: We recommend using nonpetroleum based starters. Residue in the smoke from these starters can contaminate the cooking box with the potential to effect the flavor of the meat. The use of a torch or paper and kindling is most effective. Use approximately 15-20 lbs. of charcoal in the BBQ firebox to get started. Once the meat is placed in the smoker, you can add wood and or charcoal in the firebox for smoking. You can continue to use wood or charcoal (your choice). Add wood or charcoal as needed to maintain the temperature where you want it.
For Grilling: Purchase the charcoal pan insert as an upgrade. Then place your charcoal pan in the smoker, below stainless steel grate, and put in your desired amount of charcoal for grilling. The charcoal pan insert holds 15 lbs of bbq charcoal.

If you're looking to go up a full two notches above anything you're likely to find in a big box store look no further. The SQ36 is the real deal. It's solidly built, cleverly designed and will cook a ton of meat. The metal is thick and heavy and holds heat well.

For accessories I highly recommend the pull out fire box basket for ease of loading charcoal, and the 2nd tier grate if you'll be cooking for a lot of people.

So far everything I've cooked on it has turned out really well, but chicken has been the star. Opening up the air vents allows this cooker to climb up into the mid-300's for a couple spatchcocked whole birds (two or three will fit on the standard grate) or A LOT of legs and thighs.

As far as capacity goes, if you don't mind cutting your full length slabs in half, you can fit six half-slabs on the bottom, or double that if you get the 2nd tier grate. If you do mind then just lay them out length ways and you can do two per grate (if you get the 2nd tier) and that will leave enough room on one end of the grates to cook something else. I haven't done this, but you could easily cook three pork butts or two briskets per grate as well. That's a lot of meat. (Posted on 7/20/2018)
