This recipe hits every note — savory sausage, a little maple-jalapeño kick from Big Poppa’s Jallelujah Jalapeño Seasoning, buttery toasted pretzel buns, and bright pickled toppings. We butterfly the brat, cook it gently first, then finish it hot for that grilled char flavor. It’s almost a reverse sear… for sausage. That’s how Papa rolls.

  • 4 bratwurst sausages
  • Big Poppa’s Jallelujah Jalapeño Seasoning
  • 4 pretzel buns
  • Butter (for toasting)
  • Colby Jack or Cheddar cheese slices
  • Pickled jalapeños
  • Pickled red onions
  • Kewpie mayonnaise
  • Yellow mustard or Japanese mustard
  • Shredded lettuce

Step-by-Step: Pretzel Brat Sandwich

  1. Butterfly the Brats: Carefully slice each brat lengthwise without cutting all the way through. Open them flat.
  2. Season: Generously apply Jallelujah Jalapeño to the open side so the seasoning gets inside as it cooks.
  3. Cook Indirect First: Set your pellet grill to medium heat (around 350°F). Place brats open-side up and cook gently until internal temp reaches about 145°F.
  4. Press & Char: Flip brats open-side down. Use grill presses to keep them flat and prevent curling. Cook 3–4 minutes to develop char and grill flavor. Finish at 160°F internal.
  5. Toast the Pretzel Buns: Butter the inside of each bun and toast until golden brown. For a pro move, place hot buns in a sealed bag for a few minutes to steam and stay soft.
  6. Build the Sandwich: Spread mayo on the bottom bun. Add shredded lettuce and cheese. Place hot brat on top. Add mustard, pickled jalapeños, and pickled onions. Crown it and serve.

Ingredients

  • 4 bratwurst sausages

  • 1 tbsp olive oil (optional, for brushing grill)

  • 2 tbsp unsalted butter, softened (for buns)

  • 4 pretzel buns

  • 4 slices Colby Jack or cheddar cheese

  • ½ cup shredded lettuce

  • ¼ cup pickled jalapeños

  • ¼ cup pickled red onions

  • ¼ cup mayonnaise (Kewpie or regular)

  • 2 tbsp mustard (yellow or Japanese-style)

  • 2–3 tsp Big Poppa’s Jallelujah Jalapeño Seasoning

Directions

  1. Slice each brat lengthwise without cutting all the way through. Open flat.

  2. Generously season the inside of each brat with Jallelujah Jalapeño Seasoning.

  3. Set pellet grill (or gas grill) to 350°F.

  4. Place brats open-side up and cook until internal temperature reaches 145°F.

  5. Flip brats open-side down. Use grill presses to prevent curling. Cook 3–4 minutes until char develops and internal temp reaches 160°F.

  6. Butter the cut sides of pretzel buns and toast on the grill until golden brown.

  7. Place toasted buns in a sealed bag for 2–3 minutes to keep them warm and soft.

  8. Spread mayo on the bottom bun. Add shredded lettuce and cheese.

  9. Place hot brat on top so cheese melts slightly.

  10. Add mustard, pickled jalapeños, and pickled red onions.

  11. Close bun and serve immediately.
