Warm up with this comforting Homemade Chicken Noodle Soup made from a rotisserie chicken. The rich, flavorful broth is simmered for hours, ensuring every bowl is packed with deliciousness and hearty ingredients.

Ingredients

  • 1 rotisserie chicken carcass, meat removed

  • 1 large Vidalia onion, roughly chopped

  • 5 cloves garlic

  • 4 stalks celery, roughly chopped

  • 4 carrots roughly chopped

  • Water, enough to cover

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 5 cloves garlic, chopped

  • 4 stalks celery, sliced

  • 3 carrots sliced

  • Reserved rotisserie chicken meat, shredded or diced

  • Homemade chicken stock

  • Big Poppa Smokers Desert Gold Seasoning

  • Big Poppa Smokers Little Louie's Garlic Pepper Seasoning

  • 8 ounces egg noodles or your favorite soup noodles, cooked according to package directions

Directions

  1. STEP 1: MAKE CHICKEN STOCK

  2. Separate all of the meat from the rotisserie chicken and set aside to shred.

  3. Place the chicken carcass, onion, garlic, celery, and carrots into a slow cooker. Add enough water to completely cover the ingredients. Cover and cook on Low for 10 hours. Don't season the stock while it cooks. Build the flavor after straining so you stay in control of the final soup.

  4. STEP 2: STRAIN THE STOCK

  5. Pour the stock through a fine-mesh strainer into a large bowl or pot. Discard the bones and vegetables.

  6. STEP 3: SAUTE VEGETABLES

  7. Heat the olive oil in a large Dutch oven or soup pot over medium heat. Add the onion, garlic, celery, and carrots. Cook for 6–8 minutes, or until the vegetables begin to soften.

  8. STEP 4: BUILD THE SOUP

  9. Add the shredded rotisserie chicken and the homemade chicken stock to the pot. Bring to a gentle simmer. Season to taste with Desert Gold Seasoning and Little Louie's Garlic Pepper.

  10. 5. Finish the Soup & SERVE

  11. Stir in the cooked noodles and simmer for another 2–3 minutes, just until heated through.

  12. Ladle into bowls and serve hot with crusty bread or crackers.
