MAK Kissed Brisket

Rubbed down this brisket yesterday and in the fridge overnight. Used Head Country seasoning and used a beer mop every hour. Brisket was 10.5 lbs Brisket went into my MAK at 12:30 and sliced at 11:45 pm. I used Hickory pellets. The beer used was LionsHead made in WilkesBarre, PA 1, 12oz beer 1/3 cup apple cider vinegar 1/2 cup water 1 t garlic 1 t black pepper 1 T worcehestershire 1 t salt 1 T canola oil 1 t onion powder 1 t ginger (opt) Mix all above on low heat for 15 mins. Mop every hour
