Maytag BLue Cheese and Bacon Scallop Taters

Directions:
Wanted to do a little different twist on Scalloped Potatoes. Is there anything better than Blue Cheese and Bacon? Maye a little Cream,garlic? SMoke some bacon reserve SO you dice on Maui or other sweet onion pretty fine, same with one red bell pepper. Crush about 8 closves of garlic. Heat saucepan and sautee the onion, pepper and garlic combo. Season with Salt and pepper. when translucid add 2.5 cups of heavy cream. Stir constantly and when it nears boiling remove from the fire. Slice a boatload of potatoes. No peeling them we are SMokers! thats for sissys. Butter a baking pan and layer the potatoes. Add about a cup to the taters. Layer again and add crumbled bleu cheese and about 8 slices of crumbled smoked bacon Ladle another cup the heart attack on the taters layer again and put the remaining cream and layer the top with some shredded mozzerella and Parmesean I used Reggiano. People really liked this at the Mesquite Contest!
