Desired Internal Temperature:
about 2 hr
I gave the chops a quick cure (2 hrs) using tenderquick and turbinado sugar. Rinsed, then stuffed with a jalapeno, corn, onion cornbread mixture. (added melted butter and chicken broth to bind the stuffing).
Smoked the chops with apple on the MAK at a 275 for the first 20 minutes then at 300 for the remaining time.
Served with fried green tomatoes and goodies from the garden.
