Goat Cheese Stuffed Spatchcock Chicken

Ok...long time no post! You lurkers need to start voting for some of these fine efforts by our newest members~ A little pellet gourmet Pre heat the MAK to 335 take some good quality goat cheese and mix in a teaspoon of jar garlic, 1/2 teaspoon of dried basil, and some healthy shakes of lemon pepper and mix together to make a nice paste. Prepare the chicken how you normally would but at the end with a small sharp knife from the shoulder down make an incision between the bone and the breast meat..try not to tear it up but also do your best to make a pocket with you finger...stuff the goat cheese mix. FOld the skin back over the incision. Coat the outsides with garlic olive oil and sprinkle generously with Hasty Bake Greek Rub and Lemon Pepper. put on the MAK skin side down on the Grill Grates and cook for 25 minutes, flip ovah...and cook for another 45 minutes or until the internal temp is 165. Make sure the probe is in the chicken meat and not the goat cheese. This was really good...next time I will try to get more goat cheese in it.
