Biscuits n Ham
Cooking Grill: Memphis Pro Pit Temperature: 275-325 Desired Internal Temperature: Cooking Time: Pallets Used: Pellets Directions:
I scored the ham and smoked in the Memphis Pro at 275 for most of the time, added a batch of beer braised onions... then sprinkled the ham with brown sugar and spritzed with crown. Covered the ham with foil and kicked up the heat to 325 then added a skillet of biscuits.
I split a biscuit topped with ham, added the beer braised onions...served spicy brown mustard on the side. (I ended up not using it) the onions were tasty enough.!
The biscuits looked funny (didn`t rise very high) but had great flavor. :)
beer braised onions..from the Cooking with Beer cookbook
1 1/2 cups sliced onions
2 TBs sugar
2 TBs lager
1 TBs balsamic vinegar
1/4 tsp salt
the recipes says to melt butter, add onions and sugar... cook until onions are soft, then add lager, vinegar and salt. Cook until liquid evaporates.
I didn`t do that.. I just added all to the skillet and smoked until the onions were soft and the liquid had evaporated.
