Fathers Day Extravaganza

Fathers Day Feast!! Had a great fathers day and really broke in the Memphis! Cooked a 7 lb beef tenderloin, 2 pork tenderloins, 3 racks of baby back ribs and a bacon wrapped pork tenderloin pinwheels with pecan crust. Wrapped beef tenderloin in a sauteed mushroom, garlic and butter glaze and cooked at 225 for 1.5 hrs till internal temp was 130, let rest for good 30 min under foil tent Marinated Pork Tenderloins in soy, brown sugar, cherry coke, olive oil, minced onion, pepper, salt and minced garlic for 4 hrs. cooked at 240 for 1.5 hrs, pulled at internal temp of 155, let rest for 20 min. served with cherry preserve and maple syrup glaze!! Baby back Ribs rubbed in mix of spices with brown sugar and paprika being main ingredients, cooked at 225 for 2 hrs and 15 min, then pulled off grill, wrapped in foil, poured mix of apple and grape juice in foil and cooked another hour and let steam, pulled out of foil, rubbed with brown sugar and mix of first rub, cooked another 30 minutes, then glazed with my fav sauce for another 15 min or so, Absolutely Fabulous For pinwheels, sliced about 6 strips out of each tenderloin, layed piece of bacon on top, rolled up with bacon on inside, rolled in mustard sauce and then pecans, cooked at 400 degrees for 8 min or so per side, and then topped with rest of mustard sauce! All these dishes were an amazing hit for a great fathers day feast!!!!!!
