Ham, Potato Stuffed Fattie
Cooking Grill: Memphis Pro Pit Temperature: 375 Desired Internal Temperature: Cooking Time: 2 1/5 hrs Pallets Used: Pellets Directions:
I made a sausage of ground pork, beef, beer and seasonings.
fried some potato cubes, onions and ham for the filling.
Added cheese to the cooled filling, and stuffed the fattie piston. Let the filling cool while rolling out the sausage in a one gallon baggie.
Slit the baggie open, topped with the filling, rolled and wrapped in bacon weave.
Smoked with apple pellets on the Memphis Pro.
Topped a hot waffle with the sliced ham potato stuffed fattie, added a poached egg and some creamy pepper gravy.
I liked using the Memphis Pro, I was able to get the bacon weave nice and crisp, just how I like it.
