Directions:
I took BP"S idea a little further. Coated some pieces of wild halibut with garlic EVOO & Hasty Bake greek seasoning. Put on the Grill Grates (these things are amazing for cooking fish) that were about 600 degrees on the rails for a about a minute then turned 90 degrees for another minute, flipped & did the same. When done brought in house & rested under foil while I sauteed some pasta ( I used Gemelli this time, but anything works) in EVOO, minced garlic, salt, & pepper. This take about 3 or 4 minutes. Placed the pasta on the serving platter & topped with the halibut & warm Trader Joe`s Bruschetta sauce. This was a big hit with the family. Tasted amazing. I know I said it before, but Grill Grates & EVOO are amazing for cooking fish. It`s crispy on the outside while moist & flavorful on the inside. Served here with a Caesar Salad.
