Strube Ranch Wagyu Tenderloin

Cooking Grill: Memphis Pro Grill
Pit Temperature: 300 then 500
Desired Internal Temperature: 135
Cooking Time: 1 hour 10 minutes
Pallets Used: Pellets
Directions:
Preheated Memphis Pro to 300 Trimmed up the beautiful Strube Ranch Wagyu Tenderloin..They need a better adjective...it was way more than tender! Seasoned with Big Poppa Prototype Double Secret Beef Rub! (I`m Happy!...will be in the store soon!) Put on middle shelf for better convection and let go until it hit 100 then flipped over and pulled at 120 and cranked the Memphis to 500 and I put the meat back on and cooked 3 minutes flipped repeated until it hit 135 Rested 10 minutes and sliced and once again didnt need teef.
