Wagyu Tenderloin

Pit Temperature: 300 then 500
Desired Internal Temperature: 135
Cooking Time: 1 hour 10 minutes
Pallets Used: Pellets
Directions:
Preheated smoker to 300 Trimmed up the beautiful Strube Ranch Wagyu Tenderloin..They need a better adjective...it was way more than tender! Seasoned with Big Poppa Double Secret Beef Rub! Put on middle shelf for better convection and let go until it hit 100 then flipped over and pulled at 120 and cranked the smoker to 500 and I put the meat back on and cooked 3 minutes flipped repeated until it hit 135F internal temp. Rested 10 minutes and sliced and once again didn't need teeth for this one.
