I was excited to cook these, as the butcher told me they were the most popular fish out there. Seasoned the fish flanks, Olive Oiled the Grill Grates, then seared vertical and horizontal. Afterwards I put them on the frog mat with some tiger sauce drizzled. Shelle Enjoyed them, a success!
