Bacon Wrapped Grass Fed Filet

Cooking Grill: Memphis Select
Pit Temperature: 600 sear, 375 to temp
Desired Internal Temperature: 125 for Medium Rare
Cooking Time: 20 min
Pallets Used: Briquettes
Grass Fed Filet Mignon from Father-In-Law Hobby Farm. Wrapped Filet in bacon, spread a little olive oil and kosher salt and fresh ground pepper on steaks. Preheated Grill at 600 with grill grates ready. Seared steaks for about 2-3 min/side. Pull steaks off grill and drop pit temp to 375 degrees, cook until meat thermometer reads 120 for med rare, will raise up about 5 degrees while you let meat rest for 5 minutes or so. 130 medium 135 med well 140 well Sorry for poor pics, bad lighting and cell phone are bad mix!
