Directions:
2 Costco Boneless Pork Shoulders. I wanted to try 2 different methods that sounded great after researching various recipes: 1. Gave a mustard bath. Injected with a light beer and seasonings. Applied a basic rub with dark brown sugar and regular sugar. 2. Gave a mustard bath. Injected with apple juice, water, worcestershire sauce, salt, ground cayenne pepper. Applied a rub that again used dark brown sugar and regular sugar, but also included paprika, garlic salt, kosher salt, chili powder, cayenne pepper, oregano, cumin and black pepper. This was the first time I smoked something overnight and I barely slept. If I remember correctly it took around 12 hours. Did the tinfoil/towel/ice chest method until it was close to serving time. The beer injected shoulder seemed to be more moist, but that could be due to a few different things. Both were awesome and will be something I smoke over and over again!
