New York Steaks

Cooking Grill: German Grill
Pit Temperature: 750 / 400
Desired Internal Temperature: 135
Cooking Time: 15 minutes
Pallets Used: Lump
Rubbed the New York steaks with EVOO & coated with my homemade white rub & garlic pepper. Sear over direct coals at about 750 degrees for about a minute. Turn 90 degrees for another minute, flip & repeat this process. Pull off the grill & rest for 10 minutes (this is very important & I forgot to do it this time). While resting lower temp on grill to 400. Put steaks back on indirect heat until 135 internal. Served here with smoked baked potato, smoked corn on the cob (both done on the pellet grill), & salad.
