Desired Internal Temperature: 190
Cooking Time: 8 hours
Pallets Used: Lump
Injection was beef broth with beer, pineapple juice and a few other ingredients followed by a chili based rub. I went without foil on this one and pulled it just before 190. It was just a bit on the dry side but not too bad. The sauce was some where between BBQ sauce and salsa. It was pretty good but next time ill stick with a more traditional sauce.
