Drum Smoker (UDS)
Desired Internal Temperature:
2 to 3 hrs
I started the pot on the stove to give the potatoes a head start.
Seasoned the water with garlic, onions, lemons, crab boil, Old Bay, hot peppers, kosher salt and smoked sausage.
Started the new potatoes, then placed the pot in my drum smoker.
Seasoned the corn with olive oil, kosher salt and cracked black pepper...then wrapped in bacon.
Placed bacon wrapped corn and scored spam in smoker.
Added shrimp when potatoes were tender, then the crawfish.
Placed the king crab legs on top.
Brushed the scored spam with Sweet Hot Pepper Sauce..
Served with garlic bread, cocktail sauce, drawn garlic butter and plenty of cold beer. :)
