Blackened Salmon

Cooking Grill: SOB
Pit Temperature: 550
Desired Internal Temperature: Done
Cooking Time: 12 Minutes
Pallets Used: Lump
Directions:
Rubbed salmon filet with garlic EVOO then coated with my favorite cajun seasoning. Put on oiled grill grates for a couple of minutes then twisted for marks. Flip & repeat on other side. Very simple dish. Served with spicy rice pilaf & Tuscan green bean salad.
