Pork Shoulder

Cooking Grill: MAK
Pit Temperature: 225
Desired Internal Temperature: 195
Cooking Time: 16 hours and 25 minutes
Pallets Used: Pellets
Directions:
Injected Pork with Apple Juice,Fresh Squeezed Orange,Beer, Chipotle Tobasco,Garlic Salt, and Old Bay Seasoning. Then put rub on the Pork Shoulder using Old Bay Seasoning(actually works well for pork). Was Very religious with the rub. Set MAK at 225 degrees and let Internal get to 130 then sprayed with the injection marinade. Repeated spray again at 150 and 165. Let shoulder get to 188(but it stalled for a while at 180) internal and then wrapped in foil and continued on MAK to 195 internal then Put in Ice chest wrapped in beach towels for 2 hours.
