OK Here is more proof that a Fattie is the ultimate! Start with nice bacon weave... i used Neiman Ranch apple wood smoked uncured bacon. Use the greatest sausage for fatties on earth Jimmy Deans! Spread over the bacon weave, put Philadelphia cream cheese....think of the great cheese regions.....france....Italy humboldt.....sonoma....PHILADELPHIA! and add diced red bell pepper, sweet onion (actually had real Maui Onions) and diced jalapeno....snuggle some nice australian lobster tail..... rollit up and smoke it! I know that there are a few Fatties already here...straight, dungeness crab..and now lobster....be as creative as you want... How can you mess up with good bacon jimmy dean and philadelphia1)
