Filet ala Peter Luger

Cooking Grill: Son of Brisket
Pit Temperature: 400
Desired Internal Temperature: 140
Cooking Time: 30 minutes
Pallets Used: Lump
Directions:
Got to use the Son of Brisket smoker for the 1st time. This thing`s really nice. Very well built. Cooked the filets T-Rex style & in the last 10 minutes coat the outside with Peter Luger sauce. Leave on heat long enough to carmelize sauce on the outside. Great flavor. Served with grilled ravioli, crab legs, & spinach salad.
