Bacon Wrapped Scallop

Cooking Grill: German Grill
Pit Temperature: Sear then 400 indirect
Desired Internal Temperature: springy to touch
Cooking Time: 15 minutes
Pallets Used: Lump
Start with U10 sized scallops...(the BIg Boys) Preheat German Gril. Wrap Scallops with Apple smoked bacon, dust with your favorite rub...I used Hasty Bake again...Great flavor and no MSG. Place scallops on direct side with the fire as close as you can for about 60 seconds turn at a 90 degree ange and let sear another 30 seconds, flip over and repeat. Lower charcaol height and move to the indirect side and cook for about 10 minutes. Drizzle with melted roasted garlic butter flip over again and repeat and serve....Nice casuce builds up on the bottom of the pand and cover each scallop with the reserved sauce
