Pork Chops w/ginger pear glaze

Cooking Grill: German Grill
Pit Temperature: Hothothot the 375
Desired Internal Temperature: 145
Cooking Time: 40 minutees
Pallets Used: Lump
Coat the Pork Chops with rub of choice..I used Hasty Bake Red Rub. Preheat the coals. Place directly over the coals and sear both sides. Reduce airflow to lower temp and let the chops rest for 20 minutes. Return them to grill on indirect side and glaze at 135 flip and glaze other side at 140 and pull at 145 and let rest for 15 minutes and serve
