Rasted Garlic Mustard Crusted Rack

Cooking Grill: German Grill
Pit Temperature: hothothot the 375
Desired Internal Temperature: 148
Cooking Time: 1 hour

This is a rack of Berkshire Kurobota Pork....The Kobe of Pork....Very very nice and tender pork. Light Charcoal Spread evenly roasted red bell pepper olive oil then coat with Stonewall Kitchen Roasted Garlic Mustard...(any nice oil or mustard will do) Coat liberally with Hasty Bake Greek Seasoning...Sprany with a light coating of Olive Oil Pam to glue the seasoning. Put Pork directly over the coals for about 3 monutes to brown and then turn to char the other side. Remove from fire and cover with foil while you pring the temp of the smoker down to 375. Cook until 148 Pull from smoker rest for 15 minutes under a loose foil tent and slice and enjoy
