Here is another leftover dish that is really good......
Take your leftover meat and dice it and set aside...For these we made Chicken, Tri Tip, and Pulled Pork
Heat frying pan with vegetable oil to cover the tacos.
Take Corn Tortilla and put your choice of cheese on one side. Spoon enough meat of your choice to cover about a 1/4 tortilla worth. Fold and fry until the side down is golden brown, turn and put an a plate with paper towels to drain
Prepare Guacamole and get your fillings out...I used taco sauce and sour cream and shredded Cheddar Cheese. When the tacos have drained out (about 5 minutes)
Assemble and eat!
