Desired Internal Temperature:
OK I love Swordfish....Politically incorrect but so am I.
Preheat to MAK 400 with grill grates over the direct zone
I start with a medly of citrus infused olive oils...Blood Orange, Tangerine, Lemon, and Lime. Then I drizzle (love that word) some champagne citrus vinegar in the oil mix to bring is alive. Then I put the swordfish in the bowl with the oil/vinegar and coat with lemon pepper and garlic salt. The lemon pepper is available on line is has added onion and garlic and is great (See photo for details) turn over and repeat the seasoning.
Place on the grill hood down (always) for three minutes turn diagonally and cook for 3 mor minutes.....Flip over and cook for three minutes and then turn diagonally and cook for two more minutes...
