Bacon Wrapped Fattie!

Cooking Grill: MAK
Pit Temperature: 300
Desired Internal Temperature: 160
Cooking Time: 1 hour
Pallets Used: Pellets
Start with a bacon lattice....dust with your favorite rub. Most use Jimmy Dean I use a combo of sweet Italian and hot Italian Sausage...roll out on top of bacon lattice. In a pan sautee chopped Jalapeno, red pepper, and maui onion Put softened cream cheese in a large baggie and cut one corner to make a pastry bag and squeeze out the cream cheese into the middle of the fattie. Put onion and pepper mixture and roll the fattie into a loaf. Slice and enjoy. This is so politically incorrect that its great to serve to visiting treehuggers and people who dont eat gluten and drive their priuses to the private jet!
