Simply flip it over and cut the back bone out. Turn and flatten by breaking the cartilage, then season and cook.
I flipped this one at 45 minutes for fun but it is not necessary. I use Little Louie's Garlic Pepper Seasoning salt and EVOO......Woo Hoo
