Cooking Grill: Big Poppa Drum
Pit Temperature: 225
Desired Internal Temperature: 135
Cooking Time: about 45 minutes
Pallets Used: Briquettes
Sprinkle outside of tri-tip with garlic pepper & seasoning salt. smoke directly over coal at 225 till internal temp 120 then pull & rest under foil while drum heats up. Put back on hot direct flame to sear outside for a minute or so each side. Rest for 20 minutes till about 135 internal.
