Pulled Pork Rellenos

I used some hickory smoked Memphis Pro pulled pork for these.
Roasted, peeled and seeded the anaheim chiles, filled with smoked pork, minced onion and queso fresco cheese. Dusted with flour. dipped the bottoms in batter then spooned more batter over the tops while frying. Fried on both sides until golden.
Served topped with sauce.
4 egg whites whipped
add 4 TBs of flour,
then fold in the 4 beaten egg yolks
saute minced onion and 1 clove of garlic in a bit of oil
add 2 cups of chicken broth
1 cup tomato sauce
1 tsp salt
1/2 tsp pepper
1/2 tsp oregano
simmer 10 minutes
The rellenos batter has no salt so the addition of the sauce is a plus. :)
These are also tasty with smoked chicken.
