Crab Stuffed Trout

Crab Stuffed Smoked Rainbow Trout As I walked past the fish counter of a local grocery store, I spotted some beautiful rainbow trout & picked up 5 for dinner. If you`ve never smoked trout before, you`re missing out! Ingredients: Dill Butter Sauce: - 1 stick Butter melted with... - 1/2 tsp Dill Weed Crab Stuffing: - 8 oz. lump Crab Meat chopped into small pieces - Fresh Bread Crumbs (4 or 5 Slices Wheat Bread chopped in food processor) - 1/4 cup Parsley Flakes - 1/4 cup each: Onion, Celery & Carrot finely minced & lightly sauteed - Fresh cracked Black Pepper to taste We started by washing the trout, removed the fins & coated with a little Olive Oil. Mixed all stuffing ingredients together in a bowl along with 1/2 of the Butter/Dill sauce. Stuffed the trout & sprinkled on a pinch of Salt & Pepper. Placed on Frogmats in 350 degree smoker (indirect heat) for 35 - 40 minutes using Apple Wood for smoke. The fish smoked to a beautiful amber color, was moist & had a delicate smoke flavor. I drizzled the rest of the Dill-Butter sauce over the fish & served it with some slaw & Roasted Dill-Ranch Potatoes which complimented the fish very well (I`ll post that recipe later). P.S. A little stray momma cat & her kittens, who`ve taken up residence in the bushes next to our house, came out to investigate the fish smoking and so my wife got a couple of shots of them enjoying the scraps.
