I was a part of SF chefs making cocktails last weekend. If you haven't heard of it or been, it's the best of the best of the San Francisco food and drink scene! Not sure why I was invited! :) So when I was thinking of what cocktail I was gonna make, naturally I thought of my Mak 2 Star. I first glazed some peaches with honey and lemon then put on the smoker for about 1.5-2 hours. Then peeled the skin off and pureed them. The smoke flavor was fantastic! I took my "smoked peach puree" and used is as the main ingredient in my cocktail that night, the "Smoking Gun":
1 Oz Cognac
1 Oz Combier high end triple sec)
1 Oz Smoked Peach Puree
3/4 Oz Lemon Juice
Burnt Orange Peel
serve with a cayanne sugar rim
try at home, it's savory and sweet and spicy.
