Desired Internal Temperature: 170
Cooking Time: about 45 min

Directions

Just plain old BBQ Chicken - wings, thighs, and legs.

Smeared w/ mayo and sprinkled w/ Plowboy's Yardbird rub.

Cooked on the Memphis Pro @ about 375* til done.

Basted w/ Big Bob Gibson's Red Sauce, and left about 10 more minutes to glaze the sauce a little.

BP,
I think the mayo helps keep the chicken moist, and also helps crisp the skin. I do it more for the skin than anything. It also helps make the rub stick, kinda like putting mustard on ribs.
