Put on middle shelf for better convection and let go until it hit 100 then flipped over and pulled at 120 and cranked the Memphis to 500 and I put the meat back on and cooked 3 minutes flipped repeated until it hit 135
Rested 10 minutes and sliced and once again didnt need teef.
