Brisket Brisket

Pit Temperature: 225
Desired Internal Temperature: 205
Cooking Time: 11 Hours


Followed the Big Man's recipe on this one, left it to marinate in the fridge overnight, tossed in on the grill at 7am and was ready for dinner at 6.

I modified the end a little by using barbecue sauce and a doppel beer in the foil.

turned out great, tender and delicious.

The Memphis Select doesnt go to 180 degrees, lowest it smokes is 225, still worked great!

Great thanks for posting! Is this zc10? on pelletheads? My only tip is that I dont like salt based rubs overnight as I think they tend to dry the meat by pulling moisture out for an extended period....
