Pit Temperature: 225 and then sear
Desired Internal Temperature: 140
Cooking Time: 1.5 hours

Directions

Ok I had to try this....Smoked the tri tip at 225-250 on the backwoods Smokers "Chubby" It is a real nice water smoker. I smoked the tri tip until it hit 125 the had the German Grill roaring with grill grates we now sell them custom fit for the German) Seared it nicely on both sides and then rested and carved...nice!
