Thought I couldn't BBQ last night, it was raining & all the cookers are uncovered. Was able to move the "truly" Portable Kitchen to the other side of the yard that has a covered patio. It doesn't weigh hundreds of pounds. Spiced the NY primes with EVOO, salt, pepper, garlic pepper, & my white rub. Seared for 60 - 90 seconds per side for grill marks then rested for 20 minutes. Put back on the Portable Kitchen at 400. Turned once at 120 internal temp & pulled at 135. Really nice to be able to cook outdoors in the rain, thanx to the PK.
