There are two schools of thought on how to cook the perfect steak.
On even numbered months I seem to like the T Rex the best. The T Rex is the seat first method
You start by searing the steak real close to red hot lump or the MAK on high with grill grates.) When it looks good and seared you pull and rest while you lower the cooking temp for the finish. The idea is that the steak constricts when hit with the sear and rest and relaxes while its resting waiting for the indirect finish. When the temp drops to between 350-400 put back on gril on indirect and finish to the desired internal temp. let rest and serve.
I seasoned these with Lemon Pepper, Garlic Pepper and seasoning salt. Juicy and really tender with great carmelization
