Preheat MAK to high with the direct flame uncovered

rub the roast with garlic olive oil sprinkle Hasty Bake rub and garlic pepper all over the damn thing.

sear the roast 5 mins per side on direct fire area, put roasting rack and move the the indirect side. Reduce heat to 275 let it gradually go there..) Flip over at 100....Pull at 127 and let rest for twenty minutes with a loose foil tent....slice and enjoy
