so I cut up some beef and ground it up. once ground up I seasoned with the following.
12 ounces water
1/4 cup creole
1/4 cup cayenne pepper = love it
couple shakes low sodium soy.
1 package hot italian seasoning
TS fresh garlic
TS black pepper
put all seasinings in water and stir in and mix up with ground meat than pump it into casings. I smoked with smoke house for about an hour with heavy smoke then cooked the rest with out. Using applewood. Kids told me it was the best they have ever had.
